Rinse poha in a sieve, drain, and keep aside for 5-7 minutes to soften.
Heat oil and deep-fry soaked chana dal until golden and crispy. Drain and set aside.
In another pan, heat oil. Add mustard seeds, cumin seeds, curry leaves, and green chilies.
Add onions and sauté until soft. Mix in turmeric and salt.
Add softened poha and stir gently. Cook on low flame for 2-3 minutes.
Finish with fried chana dal, roasted peanuts, lemon juice, and fresh coriander before serving hot.
